Your Remote Settings remain until you change them. They remain between power cycles. They are not a Part of any Performance, they are totally separate.

The way most computer-based programs work is you can create and save a Template for each VSTi that you wish to play. The Template memorizes which parameters are controlled by your external device. Pick CC numbers for each of the Controllers (that does not changes) what changes. Memorized by your DAW is the parameters that are assigned to be controlled. So memorizing what CC each Knob, Button, and Slider is sending is really not necessary, as mentioned they do not change between uses.
