Hi, I am trying to set up some waltzing drums.

I wrote down all the 3/4 drum arps from the data list.

there are not many:

6328 - alt rock
6560 - 68 country waltz
7883 - 84 gospel
8825 - 32 jazz waltz
9201 -09 irish hymn
9350 - 65 atbah

there is only one performance called waltz: "the waltzing quartett", which uses the drum arps "jazz waltz"

my question:
which drum kits are the other listed 3/4 arps made for?

when I try them with random kits, they sounds very weird. they must be made for specific drumkits, but which ones?

This is where the Data List booklet (pdf) is very valuable.
The last column in the Arpeggio Lists is the instrument or Drum Kit that was used originally to create the data.

You, of course, can change the assigned instruments _ but when you need to know which is the original Kit. This is the resource.
The 3/4 Country Waltz Arps it reports were created using the “Brush Kit” Data List booklet page 126.

Extra Credit:
By artful use of the Part Note Limits, you can use all or part of what an Arpeggio offers. Say you only want to use the Kick and Snare drums from a particular phrase, you can set the Part Note Limits to restrict everything else from sounding; or maybe you just want to use the Hihat and cymbals from a particular Arpeggio, again, editing the Part Note Limits can help. This is useful when you want to create your own playing mixed in with the Arp generated data.

Oh dear, how did I not see this when I was actually searching those arps right on that page. Thank you!
